Loaded Sweet Potato Fries
Product: Spicy Dukkah
3 medium peeled sweet potatoes
1 cup diced fresh tomatoes
½ cup coarsely chopped parsley
½ a lime of juice
1 tbsp paprika
1 tbsp cracked pepper
3 tbsp Table of Plenty Spicy Cashew Dukkah with Turmeric
- Preheat oven to 210°C.
- Cut sweet potato into 1cm slices, and further cut into 1cm strips.
- Toss sweet potato strips in lime juice, paprika, pepper and spicy cashew dukkah until well coated.
- Evenly place the sweet potatoes on a lined baking tray and bake for 25 minutes before removing from oven.
- Allow cooling before topping with roasted garlic cashew cream, diced tomatoes, chopped parsley and finish off with a sprinkle of spicy cashew dukkah with turmeric.
