Loaded Sweet Potato Fries

Serves: 2 - 4
Cooking Time: 20 mins

Product: Classic Dukkah

3 medium peeled sweet potatoes
1 cup diced fresh tomatoes
½ cup coarsely chopped parsley
½ a lime of juice
1 tbsp paprika
1 tbsp cracked pepper
3 tbsp Table of Plenty Spicy Cashew Dukkah with Turmeric

  1. Preheat oven to 210°C.
  2. Cut sweet potato into 1cm slices, and further cut into 1cm strips.
  3. Toss sweet potato strips in lime juice, paprika, pepper and spicy cashew dukkah until well coated.
  4. Evenly place the sweet potatoes on a lined baking tray and bake for 25 minutes before removing from oven.
  5. Allow cooling before topping with roasted garlic cashew cream, diced tomatoes, chopped parsley and finish off with a sprinkle of spicy cashew dukkah with turmeric.
