Apple and Rhubarb Overnight Oats by @feedmeichi

Product: Natural Live Kefir Probiotic Yoghurt

Overnight oats
½ cup milk or water + extra for serving
½ cup Table of Plenty Natural Kefir
1 cup oats
1 tsp honey (optional)

Rhubarb filling
1 ½ cups of diced rhubarb
2 tbsp caster sugar
1 ½ tbsp orange juice

Apple filling
1 Granny Smith apple, peeled, cored and chopped into 1cm cubes
1 tbsp water
1 tbsp butter
½ tsp cinnamon
2 tbsp caster sugar
1 tsp corn starch

Toppings
Toasted shredded coconut

• To make the overnight oats, mix all the ingredients together in a small bowl, cover and place in the fridge overnight.
• The fillings can be made the night before and refrigerated or on the morning of serving.
• To make the rhubarb filling, place the rhubarb, sugar and juice in a small saucepan over low medium heat. Cook the rhubarb till it softens. Set aside to cool.
• To make the apple filling, melt the butter in a saucepan over low heat. Add the apples, sugar, half a tablespoon of water and cinnamon to the pot and mix everything together. Cook the apples over low heat until they begin to soften. Mix the corn starch with half a tablespoon of water in a small bowl before pouring into the pot. Stir everything together until the sauce starts to thicken. Set aside to cool.
• To serve, take the oats from the fridge and loosen them up by adding a spoonful or two of milk or water. Divide the rhubarb filling between the cups or bowls you’ll be serving the oats in, then add the oats and finally add the apple filling. Drizzle the sauce from the apple filling and sprinkle the toasted coconut over the top of the apple filling.
