Lemon Sorbet Icy Poles

Serves: 4 - 6
Cooking Time: 10 mins


1 cup coconut yoghurt or coconut cream

1/2 cup fresh lemon juice (adjust to your liking)

1/2 lemon zest

1/8 cup maple syrup (add more it’s too sour for you)

1/2 cup Table of Plenty Low FODMAP Balance+ Muesli 

  1. In a bowl, add the coconut yoghurt, lemon juice, lemon zest and maple syrup and mix well to combine.
  2. Tweak the flavours your liking, more lemon for more sour and more maple syrup for more sweetness.
  3. Place two slices of lemon in your icy pole moulds and some Balance+ Muesli in the bottom, then pour in the lemon mixture.
  4. Place in the freezer to set for 8 hours or overnight. Serve and enjoy!
