Lemon Sorbet Icy Poles
1 cup coconut yoghurt or coconut cream
1/2 cup fresh lemon juice (adjust to your liking)
1/2 lemon zest
1/8 cup maple syrup (add more it’s too sour for you)
1/2 cup Table of Plenty Low FODMAP Balance+ Muesli
- In a bowl, add the coconut yoghurt, lemon juice, lemon zest and maple syrup and mix well to combine.
- Tweak the flavours your liking, more lemon for more sour and more maple syrup for more sweetness.
- Place two slices of lemon in your icy pole moulds and some Balance+ Muesli in the bottom, then pour in the lemon mixture.
- Place in the freezer to set for 8 hours or overnight. Serve and enjoy!
