Treat yourself and your loved ones with these deliciously decadent Peanut Butter and Choc Chip Muesli Cookies. A sweet you can feel good about.
2 cup Table of Plenty Nicely Nutty muesli
¼ cup + 2 tblsp crunchy peanut butter
¼ cup + 1-2 tblsp rice malt syrup
80g dark chocolate, chopped
- Preheat the oven to 180C and line a baking tray with paper.
- Pour the 2 cups of muesli into a large mixing bowl, and roughly stir through the chopped chocolate. In a small bowl, mix together the peanut butter and rice malt syrup until a smooth paste forms. Pour over the muesli mixture and mix everything together until sticky.
- Dollop heaped tablespoons of the cookie mix onto the tray. Place in the oven and bake for about 17-20 minutes, turning the tray around half way through. Let the cookies cool on the tray for half an hour before transferring to a wire rack to cool completely. Enjoy!
