Italian Herbs Panko Crumbed Cauliflower Schnitzels
1 whole cauliflower
1 bag @tableofplenty Panko Crumbs - Italian Herb Blend
1 cup passata
Bunch of fresh thyme
Grated Reggiano Parmigiana
Extra virgin olive oil for frying
Slice cauliflower in half and then into steaks.
Beat 3 eggs in a bowl and add salt and pepper.
Empty a bag of your favourite @tableofplenty Panko Crumbs into a separate bowl.
Dip your cauliflower steaks into the egg mixture, then into the panko crumbs and coat generously.
Shallow fry your cauliflower steaks in a non-stick pan with some extra virgin olive oil until golden brown.
Place parchment paper on a baking tray and position your cauliflower steaks on the tray.
Spoon on homemade or store-bought organic passata on top of each steak.
Then finely grate your favourite cheese over the top.
Bake in the oven at 180 degrees fan forced for 20 minutes.
Remove from the oven, and grate more cheese over the cauliflower steaks
Serve with sweet potato wedges and a simple salad.
