Loaded Breakfast Sweet Potato
Shake up your breakfast game with @emsswanston’s Loaded Brekky Sweet Potato with a pop of our sweet and crunchy Almond & Cinnamon Dukkah. You have to try this flavour combo.
1 Sweet potato
1/2 C Coconut or Greek Style yoghurt
2 Tbsp Table of Plenty Almond & Cinnamon Dukkah Sprinkle
2 Tbsp Almond Butter (or nut/seed butter of choice)
1/2 a banana, sliced
3-4 Strawberries, sliced
1 Tbsp coconut flakes
1 tsp cacao nibs
- Cook sweet potato by your preferred method. I like to do this ahead of time as part of my weekly meal prep. Either prick with a fork, drizzle with coconut oil/ghee, sprinkle with pink salt and roast for 30-40 mins until cooked through. Or, microwave for 3-5 mins until tender and cooked through.
- Once your sweet potato is cooked, simply slice in half.
- Top with yoghurt, banana, strawberries, shredded coconut, cacao nibs & drizzle with nut butter.
